LC-MS-based metabolomics to identify biomarkers and related metabolisms in order to enhance quality and safety of food and food products (nut quality, vegetable safety, crop disease, etc.)

Flavoromics in food flavor

Projects focus on discovery of flavor synthesis in fruits using GC-MS (aroma volatiles) and LC-MS (taste compounds and flavor precursors) to support finding molecular markers in breeding programs with improvement of product flavor


Multi-omics in food science

Metabolomics combined with other omics approaches to elucidate in-depth biochemical mechanisms and processes of food and food products (e.g. metabolomics with metagenomics in dairy product flavor and quality)
